Ingredients
– 1 lb ground turkey
– 1 onion, diced
– 3 cloves garlic, minced
– 1 tbsp taco seasoning
– 1 (15 oz) can black beans, drained and rinsed
– 1 (15 oz) can pinto beans, drained and rinsed
– 1 (15 oz) can corn, drained
– 1 (28 oz) can diced tomatoes
– 4 cups chicken or vegetable broth
– Salt and pepper to taste
– Garnishes: shredded cheese, chopped cilantro, crushed tortilla chips
Instructions
1. – In a large pot or Dutch oven, cook the ground turkey over medium-high heat, breaking it up as it cooks, until no longer pink, about 5-7 minutes.
2. – Add the diced onion and minced garlic to the pot and sauté for 2-3 minutes until fragrant.
3. – Stir in the taco seasoning and cook for 1 minute.
4. – Add the black beans, pinto beans, corn, diced tomatoes, and broth to the pot. Bring the soup to a simmer and let it cook for 15-20 minutes, stirring occasionally.
5. – Season with salt and pepper to taste.
6. – Serve the Turkey Taco Soup hot, garnished with shredded cheese, chopped cilantro, and crushed tortilla chips.
Notes
– For a spicier soup, add a diced jalapeño or chipotle chili powder to the recipe.
– Substitute ground chicken or beef for the turkey if desired.
