Ingredients
– 1 medium head of cabbage, shredded
– 2 carrots, peeled and sliced
– 1 onion, diced
– 3 cloves garlic, minced
– 1 (14.5 oz) can diced tomatoes
– 2 cups vegetable or chicken broth
– 1 teaspoon paprika
– 1 teaspoon cumin
– 1/2 teaspoon dried oregano
– 1/4 teaspoon red pepper flakes (optional)
– Salt and black pepper to taste
– Chopped parsley for garnish
Instructions
1. In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat.
2. Add the diced onion and sauté for 3-5 minutes until translucent.
3. Add the minced garlic and sauté for an additional minute, until fragrant.
4. Stir in the shredded cabbage and sliced carrots. Cook for 5-7 minutes, stirring occasionally, until the cabbage starts to wilt.
5. Pour in the diced tomatoes and broth. Season with paprika, cumin, oregano, red pepper flakes (if using), salt, and black pepper.
6. Bring the mixture to a simmer, then reduce heat to low. Cover and let the stew simmer for 15-20 minutes, or until the vegetables are tender.
