Description

Ingredients

– 8 ounces cream cheese, softened

– 1 cup powdered sugar

– 1 teaspoon vanilla extract

– 1 1/2 cups shredded carrots

– 1 teaspoon ground cinnamon


Instructions

1. In a medium bowl, beat the cream cheese with a hand mixer until light and fluffy.

2. Add the powdered sugar and vanilla extract, and continue mixing until well combined.

3. Fold in the shredded carrots until evenly distributed.

4. Using a small cookie scoop or spoon, form the mixture into 1-inch balls and place them on a parchment-lined baking sheet.

5. Refrigerate the truffles for at least 30 minutes to firm up.

6. Just before serving, roll the chilled truffles in the ground cinnamon to coat.

Notes

Store the truffles in an airtight container in the refrigerator for up to 1 week. They can also be frozen for up to 3 months.
