Ingredients

– 8 ripe apricots, halved and pitted

– 1 cup granulated sugar

– 1 cup water

– 1 lemon, juiced

– 1 teaspoon ground cinnamon

– 1 cup whole milk ricotta cheese


Instructions

1. In a medium saucepan, combine the sugar and water. Bring to a boil, stirring to dissolve the sugar.

2. Add the apricot halves and lemon juice. Reduce heat to low and simmer for 15-20 minutes, or until the apricots are tender and have released their juices.
