Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 carrots, peeled and diced

– 3 celery stalks, diced

– 4 garlic cloves, minced

– 2 (15-ounce) cans white beans, rinsed and drained

– 4 cups low-sodium chicken or vegetable broth

– 1 teaspoon dried thyme

– 1 teaspoon dried rosemary

– 1 teaspoon dried oregano

– Salt and black pepper to taste

– Grated Parmesan cheese, for serving (optional)


Instructions

1. In a large pot or Dutch oven, heat the olive oil over medium heat.

2. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, until the vegetables are tender.

3. Stir in the minced garlic and cook for an additional minute, until fragrant.

4. Add the rinsed and drained white beans, chicken or vegetable broth, dried thyme, dried rosemary, and dried oregano. Season with salt and black pepper to taste.

5. Bring the soup to a simmer and let it cook for 15-20 minutes, stirring occasionally, until the flavors have blended and the soup has thickened slightly.

6. Serve the Tuscan White Bean Soup hot, topped with grated Parmesan cheese if desired. Enjoy with crusty bread for a complete meal.

Notes

For a thicker soup, you can mash some of the beans against the side of the pot using a potato masher or the back of a spoon. This will help to thicken the broth. You can also add diced tomatoes or spinach to the soup for extra flavor and nutrition.
