Ingredients
– 1 cup (2 sticks) unsalted butter, softened
– 1 1/2 cups granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 cup mashed ube (purple sweet potato)
– 1 1/4 cups all-purpose flour
– 1/2 cup unsweetened cocoa powder
– 1 teaspoon baking powder
– 1/4 teaspoon salt
Instructions
1. 1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. 2. In a large bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.
3. 3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla and mashed ube until well combined.
4. 4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
5. 5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
6. 6. Scoop the dough by rounded tablespoonfuls onto the prepared baking sheet, spacing them about 2 inches apart.
7. 7. Bake for 12-15 minutes, or until the edges are set and the centers are still slightly soft.
8. 8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For an extra ube flavor, you can add 1/2 teaspoon of ube extract to the batter. These cookies can be stored in an airtight container at room temperature for up to 5 days.
