Ingredients
– 1 pound ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 1 head green cabbage, chopped
– 2 cans (14.5 oz each) diced tomatoes
– 4 cups beef broth
– 1 tablespoon Worcestershire sauce
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, about 5-7 minutes. Drain any excess fat.
2. Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes, stirring frequently, until the onion is translucent.
3. Add the chopped cabbage, diced tomatoes, beef broth, Worcestershire sauce, oregano, basil, salt, and pepper. Stir to combine.
4. Bring the soup to a boil, then reduce the heat and simmer for 20-25 minutes, or until the cabbage is tender.
5. Taste and adjust seasoning as needed.
6. Serve hot, garnished with freshly chopped parsley if desired.
Notes
This soup can be made ahead of time and reheated. It also freezes well for up to 3 months. For a creamier texture, you can stir in a tablespoon or two of sour cream or heavy cream at the end.
