Description

Vegan Thanksgiving-Style Smashed Potatoes are a quick and easy side dish that’s perfect for your holiday gatherings. These crispy, flavorful potatoes are a delightful plant-based alternative to traditional mashed or roasted potatoes.


Ingredients

– 2 pounds Yukon Gold potatoes, cut into 1-inch cubes

– 3 tablespoons olive oil

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– 1 teaspoon dried thyme

– 1/2 teaspoon smoked paprika

– 1/4 teaspoon cayenne pepper (optional)

– Salt and black pepper to taste

– 2 tablespoons chopped fresh parsley


Instructions

1. Preheat the oven to 400°F (200°C).

2. In a large pot, cover the cubed potatoes with cold water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are tender when pierced with a fork.

3. Drain the potatoes and return them to the pot. Use a potato masher or the back of a fork to gently smash the potatoes, leaving some chunky pieces.

4. In a small bowl, mix together the olive oil, garlic powder, onion powder, dried thyme, smoked paprika, and cayenne pepper (if using). Pour the seasoned oil over the smashed potatoes and gently toss to coat.

5. Transfer the potatoes to a baking sheet lined with parchment paper. Spread them out in a single layer.

6. Bake for 20-25 minutes, or until the potatoes are crispy and golden brown.

7. Remove the potatoes from the oven and sprinkle with fresh parsley. Serve hot.

Notes

For extra crispy potatoes, broil them for 2-3 minutes at the end. You can also add your favorite herbs or spices to the seasoning mixture. These potatoes are best enjoyed immediately, but any leftovers can be reheated in the oven or air fryer.
