Ingredients
– 2 tablespoons olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 2 bell peppers, diced
– 1 (28 oz) can diced tomatoes
– 4 cups vegetable broth
– 1 (15 oz) can tomato sauce
– 2 teaspoons dried oregano
– 1 teaspoon dried basil
– 1/2 teaspoon red pepper flakes (optional)
– 8 oz uncooked lasagna noodles, broken into 2-inch pieces
– 1 (15 oz) can ricotta cheese
– 1 cup shredded mozzarella cheese
– Salt and pepper to taste
Instructions
1. – In a large pot or Dutch oven, heat the olive oil over medium heat.
2. – Add the onion and sauté for 5 minutes until translucent.
3. – Stir in the garlic and bell peppers, and cook for an additional 2-3 minutes.
4. – Pour in the diced tomatoes, vegetable broth, and tomato sauce. Season with oregano, basil, and red pepper flakes (if using).
5. – Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
6. – Add the lasagna noodle pieces and cook for an additional 10-15 minutes, or until the noodles are tender.
7. – Remove from heat and stir in the ricotta cheese until well combined.
8. – Ladle the soup into bowls and top with shredded mozzarella cheese.
9. – Season with salt and pepper to taste.
Notes
For a heartier meal, serve the Vegetarian Lasagna Soup with a side salad and crusty bread. You can also adjust the spice level by adding more or less red pepper flakes.
