Ingredients
– 1 cup cubed fresh watermelon
– 1 cup mochi rice flour
– 2 tablespoons granulated sugar
– 2 tablespoons water
Instructions
1. – In a medium microwave-safe bowl, combine the mochi rice flour and sugar.
2. – Add the water and stir until a dough forms. Knead the dough for 1-2 minutes until smooth and elastic.
3. – Divide the dough into 8 equal pieces. Flatten each piece into a round disc and place a watermelon cube in the center.
4. – Gather the dough around the watermelon, pinching and sealing to enclose the cube completely.
5. – Arrange the mochi on a parchment-lined baking sheet. Chill in the refrigerator for 30 minutes.
