Description

Ingredients

– 1 cup cubed fresh watermelon

– 1 cup mochi rice flour

Instructions

1. – In a medium microwave-safe bowl, combine the mochi rice flour and sugar.

2. – Add the water and stir until a dough forms. Knead the dough for 1-2 minutes until smooth and elastic.

3. – Divide the dough into 8 equal pieces. Flatten each piece into a round disc and place a watermelon cube in the center.

4. – Gather the dough around the watermelon, pinching and sealing to enclose the cube completely.

5. – Arrange the mochi on a parchment-lined baking sheet. Chill in the refrigerator for 30 minutes.

6. – Serve chilled and enjoy the refreshing combination of juicy watermelon and soft, chewy mochi.

Notes

For best texture, use very ripe, juicy watermelon. Experiment with different melon varieties or add a sprinkle of matcha powder for a fun flavor twist.
