Description

These Weight Watchers Pumpkin Muffins are a guilt-free, low-calorie treat that’s bursting with the cozy flavors of fall. Moist, flavorful, and under 200 calories per serving, they make a satisfying snack or breakfast option.

Ingredients

– 1 cup canned pumpkin puree

– 2 large eggs

– 1/2 cup granulated sugar

– 1 teaspoon baking soda

– 1 teaspoon ground cinnamon

– 1/4 teaspoon ground nutmeg

– 1 1/4 cups all-purpose flour

Instructions

1. – Preheat oven to 350°F. Grease a 12-cup muffin tin or line with paper liners.

2. – In a medium bowl, whisk together the pumpkin puree, eggs, and sugar until well combined.

3. – In a separate bowl, combine the baking soda, cinnamon, nutmeg, and flour.

4. – Gently fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.

5. – Scoop the batter into the prepared muffin cups, filling them about 3/4 full.

6. – Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

7. – Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a fun variation, try adding a sprinkle of chopped walnuts or pecans to the top of the muffins before baking. You can also dust the cooled muffins with a light coating of powdered sugar for a sweet finishing touch.
