Description

This delicious Weight Watchers Taco Soup is a hearty, flavorful meal that’s perfect for busy weeknights. It’s packed with protein-rich ground turkey, fiber-filled beans and vegetables, and bold Mexican spices, making it a nutritious and satisfying option for the whole family.


Ingredients

– 1 lb ground turkey

– 1 onion, diced

– 2 cloves garlic, minced

– 1 packet taco seasoning

– 1 (15 oz) can black beans, drained and rinsed

– 1 (15 oz) can corn, drained

– 1 (15 oz) can diced tomatoes

– 4 cups low-sodium chicken broth

– Salt and pepper to taste

– Toppings: sliced avocado, shredded cheddar cheese, chopped cilantro


Instructions

1. In a large pot or Dutch oven, cook the ground turkey over medium-high heat until browned and crumbled, 5-7 minutes.

2. Add the diced onion and minced garlic to the pot and cook for 2-3 minutes, until fragrant.

3. Stir in the taco seasoning, black beans, corn, diced tomatoes, and chicken broth. Bring the soup to a simmer and let it cook for 10-15 minutes, stirring occasionally, until the flavors have melded.

4. Season with salt and pepper to taste.

5. Ladle the taco soup into bowls and top with sliced avocado, shredded cheddar cheese, and chopped cilantro.

Notes
