Description

This creamy and comforting White Bean Pesto Soup is a delicious and easy-to-make dish that’s perfect for a quick weeknight meal or a cozy weekend lunch. The combination of tender white beans, fragrant pesto, and aromatic spices creates a flavor-packed soup that’s sure to warm you up.


Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 2 (15-ounce) cans white beans, drained and rinsed

– 4 cups chicken or vegetable broth

– 1/2 cup prepared pesto

– 1 teaspoon dried thyme

– 1/2 teaspoon crushed red pepper flakes

– Salt and black pepper to taste

– Grated Parmesan cheese for serving (optional)


Instructions

1. In a large pot or Dutch oven, heat the olive oil over medium heat.

2. Add the diced onion and sauté for 5-7 minutes, until translucent.

3. Add the minced garlic and sauté for an additional minute, until fragrant.

4. Add the drained and rinsed white beans, chicken or vegetable broth, pesto, dried thyme, and crushed red pepper flakes. Stir to combine.

5. Bring the soup to a simmer and let it cook for 15-20 minutes, stirring occasionally, until the flavors have melded and the soup has thickened slightly.

6. Season with salt and black pepper to taste.

7. Serve the White Bean Pesto Soup warm, garnished with grated Parmesan cheese (if desired).

Notes

For a thicker consistency, you can blend a portion of the soup using an immersion blender or regular blender. You can also customize the soup by adding diced tomatoes, spinach, or other vegetables. The pesto can be homemade or store-bought.
