Description

Ingredients

– 8 ounces (226g) white chocolate, chopped

– 1 cup (240ml) heavy cream

– 1 cup (240g) cooked and pureed beetroot

– 1 teaspoon ground cardamom

– Pinch of salt


Instructions

1. Melt the white chocolate in a double boiler or microwave, stirring until smooth. Set aside to cool slightly.

2. In a large bowl, whip the heavy cream until stiff peaks form.

3. Fold the melted white chocolate into the whipped cream until well combined.

4. Gently fold in the beetroot puree and cardamom until the mixture is evenly colored and flavored.

5. Spoon the mousse into individual serving dishes or a larger serving bowl.

6. Refrigerate for at least 2 hours before serving.

Notes
