Ingredients
– 1 cup uncooked wild rice
– 2 cups vegetable broth
– 1 pound sweet potatoes, cubed
– 1 pound Brussels sprouts, halved
– 1 red onion, diced
– 2 tablespoons olive oil
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 cup creamy dressing (such as a tahini or yogurt-based dressing)
– 1/4 cup chopped fresh parsley
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a medium saucepan, combine the wild rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until the rice is tender and the liquid is absorbed.
3. Meanwhile, on a large baking sheet, toss the sweet potatoes, Brussels sprouts, and red onion with the olive oil, salt, and pepper.
4. Roast the vegetables in the preheated oven for 20-25 minutes, or until tender and lightly browned.
5. In a large bowl, combine the cooked wild rice and roasted vegetables. Drizzle with the creamy dressing and sprinkle with the chopped parsley.
