Ingredients
– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
– 2 medium zucchini, sliced into 1/2-inch thick rounds
– 3 cloves garlic, minced
– 1 tablespoon grated fresh ginger
– 2 tablespoons soy sauce
– 2 tablespoons rice vinegar
– 1 tablespoon honey
– 1 teaspoon cornstarch
– 1 tablespoon vegetable oil
– Salt and black pepper to taste
– Chopped green onions and sesame seeds for garnish (optional)
Instructions
1. In a small bowl, whisk together the soy sauce, rice vinegar, honey, and cornstarch. Set aside.
2. Heat the vegetable oil in a large skillet or wok over high heat.
3. Add the chicken and cook, stirring occasionally, until lightly browned and cooked through, about 5-7 minutes.
4. Add the zucchini, garlic, and ginger to the skillet and continue to cook for 2-3 minutes, until the zucchini is crisp-tender.
5. Pour in the soy sauce mixture and toss to coat the chicken and zucchini. Cook for an additional 1-2 minutes, or until the sauce has thickened.
6. Season with salt and black pepper to taste.
