Description

Indulge in the rich, creamy goodness of this classic Corn Casserole Jiffy recipe. Made with Jiffy cornbread mix, fresh corn, and a blend of melted cheeses, this comforting dish is perfect for a quick and satisfying weeknight dinner.

Ingredients

– 1 (8.5 oz) box Jiffy Corn Muffin Mix

– 1 (15 oz) can whole kernel corn, drained

– 1 (15 oz) can creamed corn

– 1 cup sour cream

– 2 eggs, beaten

– 1/2 cup unsalted butter, melted

– 2 cups shredded cheddar cheese

Instructions

1. – Preheat oven to 350°F. Grease a 9×13 inch baking dish.

2. – In a large bowl, combine the Jiffy Corn Muffin Mix, whole kernel corn, creamed corn, sour cream, eggs, and melted butter. Mix until well combined.

3. – Spread the mixture evenly into the prepared baking dish.

4. – Sprinkle the shredded cheddar cheese over the top.

5. – Bake for 45-50 minutes, or until the top is golden brown and the center is set.

6. – Let cool for 5 minutes before serving.

Notes

For a creamier texture, you can use 1 cup of sour cream instead of 3/4 cup. You can also experiment with different cheese blends, such as adding in some Monterey Jack or Parmesan.
