Description

Dill Pickle Parmesan Chicken is a quick and easy weeknight dinner that’s full of flavor. Juicy chicken breasts are coated in a crispy, tangy breading made with dill pickles and Parmesan cheese.


Ingredients

– 4 boneless, skinless chicken breasts

– 1 cup dill pickle chips, finely chopped

– 1 cup grated Parmesan cheese

– 1 cup panko breadcrumbs

– 2 eggs, beaten

– 1 tsp garlic powder

– 1 tsp dried dill

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

2. In a shallow bowl, combine the chopped dill pickles, Parmesan cheese, panko breadcrumbs, garlic powder, dried dill, salt, and pepper.

3. In a separate shallow bowl, beat the eggs.

4. Dip each chicken breast in the beaten eggs, then coat fully in the Parmesan-pickle breading mixture.

5. Place the breaded chicken on the prepared baking sheet.

6. Bake for 25-30 minutes, until the chicken is cooked through and the breading is golden brown and crispy.

7. Serve hot and enjoy!

Notes

For extra crunch, you can spray the breaded chicken with a little cooking oil before baking. Leftover chicken can be stored in the fridge for up to 3 days.
