Description

Tender chicken, fragrant rice, and a creamy tzatziki sauce come together in this easy, one-pan Dump And Bake Chicken Tzatziki Rice dish. It’s a quick and delicious weeknight dinner that the whole family will love.


Ingredients

– 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

– 1 cup uncooked long-grain white rice

– 1 (14.5 oz) can diced tomatoes, undrained

– 1 cup chicken broth

– 1 cup plain Greek yogurt

– 1 cucumber, peeled, seeded, and grated

– 2 cloves garlic, minced

– 1 tablespoon lemon juice

– 1 teaspoon dried dill

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat oven to 375°F.

2. In a large baking dish, combine the chicken, rice, diced tomatoes, and chicken broth. Stir to mix.

3. In a separate bowl, mix together the Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper.

4. Pour the tzatziki sauce over the chicken and rice mixture and stir to combine.

5. Cover the baking dish with foil and bake for 30-35 minutes, or until the rice is tender and the chicken is cooked through.

6. Remove the foil during the last 5 minutes of baking to allow the top to brown slightly.

7. Serve hot, garnished with additional dill or chopped parsley if desired.

Notes

For a creamier texture, you can use sour cream instead of Greek yogurt in the tzatziki sauce. You can also add in other vegetables like diced onions or bell peppers for extra flavor and nutrition.
