Ingredients

– 4 large yellow onions, thinly sliced

– 2 tablespoons unsalted butter

– 2 tablespoons olive oil

– 4 garlic cloves, minced

– 1/2 cup dry white wine

– 6 cups beef broth

– 2 bay leaves

– 1 teaspoon dried thyme

– 1/2 teaspoon black pepper

– 1/4 teaspoon salt

– 8 ounces crusty bread, sliced

– 2 cups shredded Gruyère cheese


Instructions

1. In a large pot or Dutch oven, melt the butter and olive oil over medium heat.

2. Add the sliced onions and sauté for 30-40 minutes, stirring occasionally, until deeply caramelized and golden brown.

3. Stir in the garlic and cook for 1 minute until fragrant.

4. Deglaze the pan with the white wine, scraping up any browned bits from the bottom.

5. Add the beef broth, bay leaves, thyme, pepper, and salt. Bring to a simmer and let the soup cook for 20 minutes.

6. Preheat the oven to 400°F (200°C).

7. Place the bread slices on a baking sheet and toast until golden brown, about 5-7 minutes.

8. Ladle the hot soup into oven-safe bowls or ramekins. Top each serving with a toasted bread slice and shredded Gruyère cheese.

9. Place the bowls on a baking sheet and broil for 2-3 minutes, or until the cheese is melted and bubbly.

10. Serve the French Onion Soup hot, garnished with additional thyme if desired.
