Description

Tender, juicy chicken breasts are marinated in a flavorful blend of garlic, herbs, and spices, then roasted to perfection alongside sweet, caramelized carrots. This Garlic Herb Chicken & Carrot Plate is a quick and easy 30-minute meal that’s sure to become a new family favorite.


Ingredients

– 1.5 pounds boneless, skinless chicken breasts

– 1 pound carrots, peeled and cut into 1-inch pieces

– 3 cloves garlic, minced

– 2 tablespoons olive oil

– 1 teaspoon dried thyme

– 1 teaspoon dried rosemary

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat oven to 400°F.

2. In a large resealable bag, combine the chicken, carrots, garlic, olive oil, thyme, rosemary, salt, and pepper. Seal the bag and shake to coat the chicken and carrots evenly.

3. Spread the chicken and carrots onto a large baking sheet, making sure they are in a single layer.

4. Roast for 25-30 minutes, or until the chicken is cooked through and the carrots are tender.

5. Serve the Garlic Herb Chicken & Carrot Plate immediately, garnished with additional fresh herbs if desired.

Notes
