Ingredients
– 1.5 pounds boneless, skinless chicken breasts
– 1 pound carrots, peeled and cut into 1-inch pieces
– 3 cloves garlic, minced
– 2 tablespoons olive oil
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Preheat oven to 400°F.
2. In a large resealable bag, combine the chicken, carrots, garlic, olive oil, thyme, rosemary, salt, and pepper. Seal the bag and shake to coat the chicken and carrots evenly.
3. Spread the chicken and carrots onto a large baking sheet, making sure they are in a single layer.
4. Roast for 25-30 minutes, or until the chicken is cooked through and the carrots are tender.
5. Serve the Garlic Herb Chicken & Carrot Plate immediately, garnished with additional fresh herbs if desired.
Notes
For extra flavor, you can marinate the chicken and carrots for 30 minutes to 1 hour before roasting. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
