Ingredients
– 2 slices whole-wheat bread
– 2 leaves romaine lettuce, washed and patted dry
– 1/4 cup fresh parsley, chopped
– 2 tablespoons fresh chives, chopped
– 2 tablespoons fresh tarragon, chopped
– 1/4 cup mayonnaise
– 2 tablespoons sour cream
– 1 tablespoon lemon juice
– 1 teaspoon Dijon mustard
– 1/4 teaspoon garlic powder
– Salt and black pepper to taste
Instructions
1. In a small bowl, combine the parsley, chives, and tarragon. Set aside.
2. In a separate bowl, mix together the mayonnaise, sour cream, lemon juice, Dijon mustard, and garlic powder. Season with salt and pepper to taste.
3. Spread the creamy dressing evenly on one slice of bread.
4. Arrange the romaine lettuce leaves on top of the dressing.
5. Sprinkle the chopped herb mixture over the lettuce.
6. Top with the remaining slice of bread to complete the sandwich.
Notes
For a heartier meal, you can add sliced avocado, cucumber, or tomato to the sandwich. The green goddess dressing also makes a delicious dip for fresh vegetables.
