Ingredients
– 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
– 1 onion, diced
– 3 cloves garlic, minced
– 2 tablespoons curry powder
– 1 teaspoon ground allspice
– 1 teaspoon ground ginger
– 1 teaspoon ground coriander
– 1 teaspoon ground cumin
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 can (13.5 oz) coconut milk
– 1 cup chicken broth
– 2 tablespoons tomato paste
– 2 tablespoons brown sugar
– 1 tablespoon lime juice
– Chopped cilantro for garnish
Instructions
1. In the Instant Pot, sauté the onion and garlic in a bit of oil until fragrant, about 2-3 minutes.
2. Add the chicken, curry powder, allspice, ginger, coriander, cumin, salt, and pepper. Stir to coat the chicken.
3. Pour in the coconut milk, chicken broth, tomato paste, and brown sugar. Stir to combine.
4. Secure the lid and set the Instant Pot to pressure cook on high for 12 minutes.
5. Once the cooking time is up, allow the pressure to naturally release for 10 minutes, then quick-release the remaining pressure.
6. Stir in the lime juice and adjust seasoning to taste.
7. Serve the Jamaican Curry Chicken over rice, garnished with chopped cilantro.
Notes
For a thicker sauce, you can make a slurry with 2 tablespoons of cornstarch and 2 tablespoons of water, then stir it into the sauce at the end. This will help thicken it up.
