Description
Warm, fragrant lentils simmered in a cinnamon-infused brown sugar broth for a quick and comforting weeknight meal.
Ingredients
– 1 cup brown lentils, rinsed
– 2 cups vegetable or chicken broth
– 2 tablespoons brown sugar
– 1 teaspoon ground cinnamon
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. In a medium saucepan, combine the lentils and broth. Bring to a boil over high heat.
2. Reduce heat to low, cover, and simmer for 10-12 minutes, or until lentils are tender.
3. Stir in the brown sugar, cinnamon, salt, and pepper. Taste and adjust seasonings as needed.
4. Serve hot, garnished with additional cinnamon if desired.
Notes
For a richer flavor, use chicken broth instead of vegetable. You can also add a splash of apple cider vinegar or lemon juice at the end for a touch of acidity.
