Longevity Noodles (Yi Mein) are a beloved Chinese comfort food that are quick, easy, and incredibly delicious. This classic noodle dish features tender noodles, fresh vegetables, and savory proteins, all tossed in a flavorful sauce for a satisfying and nutritious meal.
Ingredients
– 8 ounces dried longevity (yi mein) noodles
– 2 tablespoons vegetable oil
– 1 pound boneless, skinless chicken breasts, sliced
– 2 cups shredded cabbage
– 1 cup sliced mushrooms
– 2 cloves garlic, minced
– 2 tablespoons soy sauce
– 1 tablespoon rice vinegar
– 1 teaspoon sesame oil
– Salt and pepper to taste
– Chopped green onions, for garnish
Instructions
1. Bring a large pot of water to a boil. Add the longevity noodles and cook according to package instructions, about 5-7 minutes, until tender. Drain and set aside.
2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken and cook, stirring occasionally, until the chicken is cooked through, about 5-7 minutes.
3. Add the shredded cabbage, sliced mushrooms, and minced garlic to the skillet. Sauté for 2-3 minutes, until the vegetables are tender.
4. Add the cooked noodles, soy sauce, rice vinegar, and sesame oil to the skillet. Toss everything together until well combined and heated through.
5. Season with salt and pepper to taste.
6. Serve the Longevity Noodles (Yi Mein) hot, garnished with chopped green onions.
Notes
– For a vegetarian version, omit the chicken and use tofu or extra vegetables.
– Feel free to add other vegetables like carrots, bell peppers, or bean sprouts.
– This dish can be made ahead and reheated, or enjoyed as leftovers.
