Description

Indulge in the creamy, earthy delight of Matcha Banana Pudding – a quick and easy dessert that combines the vibrant flavor of matcha with the sweetness of ripe bananas.


Ingredients

– 3 ripe bananas, mashed

– 2 cups whole milk

– 1/2 cup granulated sugar

– 3 tablespoons cornstarch

– 2 tablespoons matcha powder

– 1 teaspoon vanilla extract

– 1/4 teaspoon salt


Instructions

1. In a medium saucepan, whisk together the mashed bananas, milk, sugar, cornstarch, matcha powder, vanilla, and salt until well combined.

2. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil, about 5-7 minutes.

3. Remove from heat and pour the pudding into a serving bowl or individual cups.

4. Cover the surface with plastic wrap to prevent a skin from forming, and refrigerate for at least 2 hours or until chilled and set.

5. Serve chilled, garnished with additional banana slices and a dusting of matcha powder, if desired.

Notes

For a creamier texture, use heavy cream in place of some of the milk. You can also add a tablespoon of rum or brandy for a boozy twist.
