Description

Indulge in the ultimate summer treat with these irresistible Peach Butter Swim Biscuits, featuring a sweet peach-infused dough and a decadent vanilla glaze topping. They’re quick and easy to make, ready in just 30 minutes, and sure to become a new family favorite.

Ingredients

– 2 cups all-purpose flour

– 1 tablespoon baking powder

– 1/2 teaspoon salt

– 1/2 cup unsalted butter, chilled and cubed

– 3/4 cup peach butter

– 3/4 cup cold milk

– 1 cup confectioners’ sugar

– 2 tablespoons heavy cream

– 1 teaspoon vanilla extract

Instructions

1. Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.

2. In a large bowl, whisk together the flour, baking powder, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs.

3. Stir in the peach butter until just combined. Gradually add the milk, mixing just until a soft dough forms.

4. Turn the dough out onto a lightly floured surface and gently knead a few times. Pat the dough into a 1/2-inch thick round.

5. Using a 2-inch round biscuit cutter, cut out the biscuits and place them on the prepared baking sheet, spacing them about 1 inch apart.

6. Bake for 12-15 minutes, or until the biscuits are golden brown.

7. In a small bowl, whisk together the confectioners’ sugar, heavy cream, and vanilla extract until smooth.

8. Drizzle the vanilla glaze over the warm biscuits and serve immediately.

Notes

For a variation, try adding a tablespoon of chopped fresh thyme or rosemary to the biscuit dough. The biscuits can be stored in an airtight container at room temperature for up to 3 days.
