Description

Grandma’s perfect Pink Bow Tie Pasta with Beet Alfredo is a vibrant, creamy, and irresistible twist on classic pasta alfredo. This easy 30-minute recipe transforms bow tie pasta into a beautiful and delicious dish that’s perfect for a quick weeknight meal or special occasion.

Ingredients

– 12 ounces bow tie pasta

– 1 pound beets, peeled and chopped

– 3 cloves garlic, minced

– 1 cup heavy cream

– 1 cup grated Parmesan cheese

– 1/4 cup unsalted butter

– 1 teaspoon salt

– 1/4 teaspoon black pepper

– 2 tablespoons chopped fresh parsley

Instructions

1. Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente. Drain and set aside.

2. In a blender or food processor, combine the chopped beets, garlic, heavy cream, Parmesan, butter, salt, and pepper. Blend until smooth and creamy.

3. In a large skillet, heat the beet alfredo sauce over medium heat, stirring occasionally, until warmed through, about 5 minutes.

4. Add the cooked bow tie pasta to the skillet and toss to coat evenly in the sauce.

5. Serve the Pink Bow Tie Pasta with Beet Alfredo immediately, garnished with the chopped fresh parsley.

Notes

For a richer sauce, add an extra 1/4 cup of Parmesan cheese. You can also customize the flavor by adding a pinch of nutmeg or a squeeze of lemon juice.
