Description

Ingredients

– 3 medium beets, roasted and peeled

– 8 ounces goat cheese, softened

– 2 tablespoons fresh thyme leaves

– 2 tablespoons honey

– 1 teaspoon lemon zest

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat oven to 400°F. Wrap the beets in foil and roast for 45-60 minutes, until tender. Allow to cool, then peel and chop the beets.

2. In a medium bowl, combine the chopped beets, goat cheese, thyme, honey, lemon zest, salt, and pepper. Mix well until fully incorporated.

3. Shape the mixture into a log or round on a piece of parchment paper or plastic wrap. Wrap and refrigerate for at least 2 hours, or until firm.

4. Unwrap the chilled beet and goat cheese log and place on a serving platter. Garnish with extra thyme sprigs, if desired.

5. Serve with crackers, crostini, or your favorite dippers.

Notes
