Ingredients
– 8 ounces high-quality dark chocolate, chopped
– 1/2 cup (1 stick) unsalted butter, cubed
– 3 large eggs
– 3 large egg yolks
– 1/3 cup granulated sugar
– 2 tablespoons all-purpose flour
Instructions
1. Preheat the oven to 450°F. Grease four 6-ounce ramekins and dust with cocoa powder.
2. In a medium heatproof bowl, combine the chopped dark chocolate and cubed butter. Set the bowl over a saucepan of simmering water, making sure the bowl doesn’t touch the water. Stir occasionally until the chocolate and butter are melted and smooth.
3. In a separate bowl, whisk together the eggs, egg yolks, and sugar until light and fluffy, about 2-3 minutes.
4. Gently fold the egg mixture into the melted chocolate mixture, then fold in the flour until just combined.
5. Divide the batter evenly among the prepared ramekins.
6. Bake for 8-10 minutes, until the edges are set but the centers are still soft and molten.
7. Carefully run a knife around the edges of the ramekins and invert the cakes onto plates. Serve immediately.
Notes
For best results, use high-quality dark chocolate with a minimum of 70% cacao. You can also experiment with different flavor variations, such as adding a touch of espresso powder or a splash of Kahlua to the batter.
