Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 2 cans (15 oz each) white beans, drained and rinsed
– 1 onion, diced
– 3 cloves garlic, minced
– 2 tsp ground cumin
– 1 tsp dried oregano
– 1 tsp chili powder
– 1/2 tsp salt
– 1/4 tsp black pepper
– 4 cups chicken broth
– 1 cup shredded Monterey Jack cheese (for serving)
– Chopped fresh cilantro (for serving)
Instructions
1. – Add the cubed chicken, white beans, onion, garlic, cumin, oregano, chili powder, salt, and pepper to a slow cooker. Pour in the chicken broth and stir to combine.
2. – Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the flavors have melded.

Notes
– For a thicker chili, you can mash some of the white beans against the side of the slow cooker towards the end of cooking.
