Description

This Slow Cooker White Chicken Chili is a comforting and flavorful dish that’s perfect for a chilly day. Tender chicken, creamy white beans, and aromatic spices come together in the slow cooker for a hassle-free meal the whole family will love.


Ingredients

– 2 pounds boneless, skinless chicken breasts

– 2 (15 oz) cans white beans, drained and rinsed

– 4 cups low-sodium chicken broth

– 1 onion, diced

– 3 cloves garlic, minced

– 2 teaspoons ground cumin

– 1 teaspoon dried oregano

– 1 teaspoon chili powder

– 1/2 teaspoon ground coriander

– 1/4 teaspoon cayenne pepper (optional, for heat)

– Salt and black pepper to taste

– Chopped fresh cilantro, diced avocado, and lime wedges for serving


Instructions

1. In a slow cooker, combine the chicken, white beans, chicken broth, onion, garlic, cumin, oregano, chili powder, coriander, and cayenne (if using). Season with salt and pepper.

2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and shreds easily.

3. Remove the chicken from the slow cooker and shred or chop it. Return the shredded chicken to the slow cooker and stir to combine.

4. Serve the Slow Cooker White Chicken Chili hot, garnished with chopped cilantro, diced avocado, and a squeeze of fresh lime juice.

Notes

For a thicker chili, you can mash some of the white beans against the side of the slow cooker. You can also add extra chicken broth or water to adjust the consistency to your liking. This chili can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
