Ingredients

– 1 pound green split peas, rinsed

– 6 cups low-sodium vegetable or chicken broth

– 1 large onion, diced

– 3 carrots, peeled and diced

– 3 celery stalks, diced

– 3 cloves garlic, minced

– 1 bay leaf

– 1 teaspoon dried thyme

– 1/2 teaspoon smoked paprika

– Salt and black pepper to taste


Instructions

1. In a large pot, combine the rinsed split peas and broth. Bring to a boil over high heat.

2. Reduce heat to medium-low, cover, and simmer for 20 minutes, stirring occasionally.

3. Add the onion, carrots, celery, and garlic. Continue simmering for 15-20 minutes, or until the vegetables are tender and the peas have softened.

Notes
