Description

Creamy, flavorful, and ready in just 30 minutes, this Stove Top White Chicken Chili is a family-favorite weeknight meal. Packed with tender chicken, white beans, and a blend of warm spices, it’s the perfect cozy and comforting dish.


Ingredients

– 1 lb boneless, skinless chicken breasts, cubed

– 1 tablespoon olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 1 tablespoon ground cumin

– 1 teaspoon dried oregano

– 1/2 teaspoon chili powder

– 1/4 teaspoon cayenne pepper (optional for spice)

– 2 (15 oz) cans white beans, drained and rinsed

– 4 cups chicken broth

– Salt and pepper to taste

– Toppings: shredded cheese, chopped cilantro, lime wedges


Instructions

1. – In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes until translucent.

2. – Add the minced garlic and sauté for 1 minute until fragrant.

3. – Add the cubed chicken and cook for 5-7 minutes, stirring occasionally, until chicken is no longer pink.

4. – Stir in the cumin, oregano, chili powder, and cayenne (if using). Cook for 1 minute to toast the spices.

5. – Pour in the chicken broth and add the drained and rinsed white beans. Bring to a simmer.

6. – Reduce heat and let the chili simmer for 15-20 minutes, stirring occasionally, until thickened to your desired consistency.

7. – Season with salt and pepper to taste.

8. – Ladle the Stove Top White Chicken Chili into bowls and top with shredded cheese, chopped cilantro, and a squeeze of fresh lime juice.

Notes

– For a thicker chili, you can mash some of the white beans against the side of the pot.

– Customize the spice level by adjusting the amount of cayenne pepper.

– Swap out the chicken for ground turkey or pork for a different protein.
